2 cups old fashioned oats
1 1/3 cups raw slivered almonds
1 cup unsweetened flaked coconut
3 tbs unsalted butter
1/4 cup raw honey
1 cup dried apricots
3/4 cup dried cranberries
1/2 cup cashews
1/2 cup mixed nuts (unsalted)
1. Preheat oven to 300 F
2. Combine oats, almonds, and coconut in a large bowl. Melt the butter and honey and add to the mixture. Spread evenly on a baking sheet and bake for 20-25 min (until golden brown), stirring once or twice. Let cool.
3.Chop nuts and quarter dried apricots. Combine with cooled oat mixture and drizzle a little maple syrup into the mix.
