Ingredients: 2 eggplants 2 tbs olive oil 1 pkg of frozen spinach 1 large tub of ricotta 1 tsp nutmeg salt and pepper 1/2 jar of your favourite pasta sauce Bread crumbs Freshly grated parmesan Directions: First, place frozen spinach in a strainer in the sink and pour a few cups of boiling water over to wilt the spinach while you are preparing the eggplant.
